I had made an omelet for my other weekly dish this past week, and needed some comfort food for this recipe, so chose to make some onion rings.

The rings came out beautifully.  They were so exciting to see fry up, and I got more anxious as they were completing.  I kept the temperature on point, so I got perfect onions. 

Peanut oil, however, is way too expensive for me to buy, so I had to use vegetable oil for the frying.  I know the onions would have been twice as good using the peanut oil, but I could not see paying for a $20 gallon of oil to make the rings.  Therefore, I had to use a less appealing oil for this recipe.
