I am not fond of omelets, probably because of all the other ingredients that you put inside of them.  I have grown up just eating eggs, without having anything inside or on top of them.  So, today I tried Martha’s Perfect Omelet.  I love spinach, so thought that this would bring a new love towards wanting to make more omelets.

The omelet was easy enough to make, and I had the other ingredients on hand, so nothing that was peculiar about making this dish. Because it was so beautiful with the cheese and spinach, I did not fold it over like Martha did and left it open to show all the beauty of the ingredients.   The flavor was good, but I would definitely prefer just my eggs without anything else incorporated into them.
