I became much more appreciative of rice when I lived and worked overseas and consumed rice each day, so even now, I often eat rice for my main meals.  I also incorporate many different ingredients into my rice, which changes the flavor, appearance, and consistency of my rice dishes.

Martha’s Asparagus and Pea Risotto recipe instantly caught my eye, so I made this my third dish.   I, however, have never used lemon in any of my rice dishes, so this made it pop.  The vegetables also make this an appealing dish, but due to having to use the Royal Blend rice, which consists of Texmati white rice, brown rice, wild rice, and red rice the texture and color was much different than Arborio or Carnaroli white rice, which we did not have in our small-town Walmart.  This small change, however, did not take away from the taste of this dish and still worked wonderfully well.
