I am a soup fanatic, so the second recipe that I made this week was the Potato and Buttermilk Soup, which I did have to vary a bit because of having company with small children over to try it.
This soup is quite rich, because of the buttermilk, which also gives it a creamy and buttery flavor, and the recipe also called for leaving the new potatoes whole, which would have been difficult for the children to eat, so I did cut them up. I also inserted some American cheese, due to the children being cheese lovers(and I thought they would enjoy this flavor and the soup a bit more). I also left the dill sprigs off the soup as the children would not have eaten these at all, according to their mom.
The flavors, however, were wonderful and I believe we all gained 5 pounds, just from the two bowls that we all devoured.
