I was not happy with how my eggs turned out this past week, so had to make myself a comfort food, which was Donn’s Waffles. These were absolutely splendid. I even added something else to my waffles, that were not in the recipe, and this was fresh strawberries. Once I put the batter into the iron, I just placed the cut-up strawberries on top of them and let them bake together. I did spray the iron after each waffle, so the strawberries would not stick as badly as what they could have, but I felt this worked wonderfully well.
Because there are 2 eggs and 3 additional egg whites in this recipe, this makes the waffles much more light and airy. Also, as the waffles come out of the iron, you will toss them in your hands to get the steam out, which will allow them to cool without getting soggy. These are a couple of Martha’s secrets.
They looked just beautiful coming out of the iron and I even have enough leftovers for the remainder of the week…whenever I need more comfort foods.
