Recipe #9: Deviled Eggs (p 152 & 153)

I am an egg fanatic, as they are such a nutritious item that I always keep in my kitchen, and make all kinds of eggs each week.  They are such a soothing food, no matter what kind of day you have had, and I even make them for my suppers, so also love deviled eggs. 

I felt, however, that this recipe pushed the process, as I usually let my eggs set for a minimum of one whole day and let the yolks get firmly set, which adds to a richer flavor.  This recipe also called for using Dijon mustard and I am not used to making my deviled eggs with this type of mustard.  I am more used to using just yellow mustard, so was not quite as attached to these eggs than what I am used to.  I even sprinkled paprika on top of them, which I normally do, but I just could not get the flavor that I was searching for.
